Bacon, Asparagus, Spinach and Asiago Frittata

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: 4-6 servings

Ingredients

  • 6 eggs
  • 2 tbsp. heavy cream
  • 1/2 tsp. pepper
  • Pinch of salt (if not using bacon, add 1/4 tsp. of salt)
  • 4 slices bacon
  • 1 tbsp. butter
  • 2 tbsp. onion, chopped
  • 6 asparagus spears, chopped
  • 1 tsp. garlic
  • 2 cups spinach
  • ½ cup asiago cheese

Instructions

  1. In a small bowl, beat eggs, cream, salt, and pepper with a whisk. Set aside.
  2. In a medium skillet, cook the bacon to desired crispiness. Drain grease. Set bacon aside.
  3. Add butter to the skillet. Cook asparagus, onion, and garlic over low heat until softened. Add spinach for 1 minute, or until wilted. Cut bacon into pieces and spread over the vegetables.
  4. Top with egg mixture. Cook until it begins to set up, but not fully done.
  5. Top with cheese. Place under broiler for about 2 minutes, until the cheese is bubbly and beginning to brown.
